Let’s face it: everyone loves a meal from Chipotle. They offer delicious, healthy option, and it’s hard to turn down that convenience. But the one thing that keeps me from eating there all the time? Cost. It’s hard for me to shell out $7 for a bowl of rice and beans when I know I can recreate the same thing on my own for a lot less.
So, I tried it. It certainly was cheaper. And it wasn’t even that hard. May I present to you my homemade veggie burrito bowls:
- Green bell pepper
- Red onion
- 3/4 cup uncooked brown rice
- 1-2 tbsp. cilantro
- Juice of 1/2 lime
- 1 can black beans
- 2 tsp. cumin
- 2 tsp. chili pepper
- Toppings of choice, including: avocado, guacamole, salsa, cheese, sour cream
When the rice is almost finished, heat a few tablespoons of vegetable oil in a skillet over medium-high heat. Thinly slice the bell pepper and half of the onion.
Add the vegetables to the hot pan and season with a pinch of salt. Cook the peppers and onions in the skillet until the onions are sweet and the peppers have softened, about seven minutes. Remove from the pan.
Next, add a bit more oil to the pan and turn the heat down to medium-low. Add the can of black beans with the liquid to the pan, then season with cumin, chili and a pinch of salt. Let the beans cook until the sauce thickens a bit, about five minutes.
In the meantime, when the rice is finished cooking, chop the cilantro and mix it into the rice.
